"Esse é o nosso segundo ano aqui no Alma e esse ano, com certeza, foi mais fácil do que o ano passado. O grande desafio na realidade é o planejamento, é a logística antes do evento acontecer, entendendo todas as áreas que a gente vai atender, entendendo o público e a pré-produção da comida, que é feita na nossa cozinha central e a gente tem uma cozinha de apoio aqui, onde a gente finaliza. É muito importante para a gente ter uma equipe treinada já há tanto tempo. Há mais de 15 anos, o Capim Santo está aqui no Rio de Janeiro, com o Instituto Capim Santo, então a gente tem um time maravilhoso que faz isso acontecer com muito carinho", contou.
